<br />The picture of the quarries would not be complete without
<br />the woman's ~-iew paint. `.; ,. Gns \elson, who is still living in
<br />Sedalia, tells us of her life in the boarding house at the Santa Fe
<br />quarry:
<br />"I operated the boarding house for ten .-Par,. ]lost of the
<br />time I had a helper. but often I did the :cork alone, \Ce ha3 from
<br />10 to 30 men to fetid each day-. The matt had to be up on the hill at
<br />seven o'clock so breakfast must be on time. \Te got everything
<br />reads the nisht before. sort the tablet, ground the coffee, and cut
<br />the meat so that in the morning all we needed to do was make the
<br />oat-meal and stir np the pancakes.
<br />"\Ce set a gad table. ]Ir. \eLson tisouldn't stand for anything
<br />else; he worked the men hard end said they needed good food and
<br />lots of it.
<br />"P, e baked 20 large ]oases of bread ever}- other day-. I had a
<br />big strong Bohemian woman to help me. \Ce made eight loaves
<br />out into the pans and when they were ready to bake, we would
<br />make out another pan full.
<br />"For dinner we always started with some 6-ind of soup. The
<br />men were care fond of a dried fruit soup, a Swedish dish, made
<br />will: ground prunes, raisins, tapioca, and sugar. Sometimes we
<br />sen•ed milk soup made with rice, water, milk, and salt. \Ce had
<br />two or three vegetables, bean, peas, tomatoes, and always potatoes.
<br />\Ve served two kinds of meat at each meal, except breakfast. For
<br />desert there was dried stewed fruit and cake, or else pie. \chen the
<br />manager came, of course we alwa}-s feed extra.
<br />"\\'e bought every thing wholesale from Denser or Castle Rock.
<br />I had a large ice-bos outside the door where I could store a quarter
<br />of beef or porl-. \\"e had our Own chickens and milked five cows.
<br />]ir. ';elso^ broke out a piece of land where we raised our otcn
<br />yegetables. The men paid $4.50 a week•board. after all bills were
<br />paid we showed little or no profit on tl,e boarding house but we
<br />had our living from it.
<br />"It w-asn't ezactlc au easy life but I managed, sometimes alone,
<br />and I had fire small boys. ][y- oldest son, Harry, was born u:
<br />Deucer in 1494, George was born at the upper O'Brie:t Gawp and
<br />Gus, l'arl, and Frank at the Santa Fe quarry. Ton can do any-
<br />thing :? y-ou p'an your work. I cooked three meals a dap for ten
<br />or sure men. cared for five children under 10 }-ears of age, took
<br />care of the garden, milked five cows, and still had time in after-
<br />.,: ors :o hitch up the horse to the buegy and drive into Castle Rock
<br />'o ,h;,a. Unce I had three little fellows sick with t}•phoid fever,

<br />"\Ce lived at the gnarry for ten tears, and it was a welcome
<br />relief to mote my family of growing boys to the ranch at Sedalia.
<br />"Four of mc• sons are still living, Carl and Frank lice with me
<br />in Sedalia, George has been in the hospital since R'orld \Car One,
<br />and Harr}-, his wife Ellen, and my three grandsons, Gordoa,
<br />\~alter, and \"ernon live on the ranch. '~fy grandson, Robert, was
<br />kille3 in the invasion of Leyte."
